Bell-peppers stuffed with ground beef, rice and tomatoes.

Recipe Ingredients for Stuffed Peppers

2 tbsp extra-virgin olive oil
1 3/10 pounds ground beef
6 oz tomato paste
14 1/2 oz diced tomatoes
3 cups jasmine rice, cooked
6 green bell peppers

Recipe Directions for Stuffed Peppers

  1. Heat a pan over medium-high heat.

  2. Brown the beef in the olive oil.

  3. Cook the rice in a separate pot.

  4. Drain the cooked beef.

  5. Mix the tomato paste with hot water to dilute into a sauce.

  6. Combine beef, rice, tomato sauce, and diced tomatoes.

  7. Hollow out 6 bell peppers of any color.

  8. Stuff the peppers with the beef and rice mixture.

  9. Bake in microwave on high for 6 minutes.
