Recipe Ingredients for Stuffed Peppers

2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 cup Rice, Brown, Medium-grain, Cooked
1 medium Squash, Summer, Zucchini, Includes Skin
0.5 cup Corn, Sweet, Yellow
1 small Onions
2 clove Garlic
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.5 lemon yields Lemon Juice
1 1tsp Olive Oil
1 tsp Sugars, Granulated
2 slice (1 oz) Cheddar Cheese
0.5 cup Black Beans, Organic
5 sprigs Dill Weed, Fresh

Recipe Directions for Stuffed Peppers

  1. Sautee onion in olive oil

  2. Add garlic

  3. Add zucchini and tomato and corn

  4. Add lemon juice, sugar and dill

  5. Add beans and rice

  6. Divide into the two peppers

  7. Top each with a slice of cheese

  8. Bake!
