Recipe Ingredients for Stuffed Peppers w/ Quinoa

1 medium (2-1/2" dia) Onions
2 tbsp Olive Oil
2 stalk, large (11"-12" long) Celery
3 tsp Cumin
2 clove Garlic
10 oz Frozen Cut Leaf Spinach
28 oz Diced Tomatoes
15 oz Black Beans, Organic
3 carrot (7-1/2") Carrots
0.75 cup Quinoa
4 medium Red Bell Pepper

Recipe Directions for Stuffed Peppers w/ Quinoa

  1. Saute onions and celery in olive oil.

  2. Add cumin and garlic.

  3. Stir in thawed and pressed spinach and diced tomatoes.

  4. Add black beans and carrots.

  5. Cook until majority of liquid is gone.

  6. Spoon mixture into clean halves of red peppers.

  7. Bake for 1 hour at 350F; pour liquid from diced tomatoes on bottom of baking pan to prevent burning.
