Recipe Ingredients for Stuffed peppers (w/o sausage)

1 bell pepper
1 oz. feta cheese
1/2 cup brown rice
1/4 cup sun-dried tomatoes
1/2 cup fresh spinach
1/4 cup sweet onion

Recipe Directions for Stuffed peppers (w/o sausage)

  1. Parboil peppers set to side

  2. combine rice and other ingredients (except cheese)

  3. *sausage is sliced thin and combined w/rice muixture as well)

  4. cover in cheese, bake around 20 min @ 350ish
