Pepper stuffed with mushrooms, quinoa and black beans

Recipe Ingredients for Stuffed peppers with mushrooms and quinoa

4 large red bell peppers
15 oz tomato sauce
15 oz black beans
1 cup quinoa
1 onion
2 cups mushrooms
2 tbsp pure maple syrup
2 tbsp olive oil
1 piece Chile Powder
3 cloves minced garlic

Recipe Directions for Stuffed peppers with mushrooms and quinoa

  1. Saute onions and garlic

  2. Add all other ingredients, reserving one cup tomato sauce

  3. Simmer for 20 minutes

  4. Pour mixture into peppers, topping with remaining tomato sauce

  5. Bake at 325 for 15 minutes
