A rice and turkey chili filling for stuffed peppers

Recipe Ingredients for Stuffed Peppers Filling

1 3/10 pounds ground turkey
1 medium onion, diced
4 cups rice
16 ounces black beans
16 ounces diced tomatoes with zesty mild green chilies
1/2 cup reduced fat cheese
1 cup corn
1/4 cup chili powder
2 teaspoons cayenne pepper
2 tablespoons ground cumin

Recipe Directions for Stuffed Peppers Filling

  1. cook 4 cups of rice

  2. brown turkey and onions

  3. add one can of black beans and one can of diced tomatoes and 1 cup of frozen corn to cooked turkey and onions, heat until warm

  4. Spoon 4 cups of rice into the turkey mixture. Stir. Add spices to taste. Add half a cup of shredded cheese.

  5. Filling is ready to be stuffed into peppers.
