Stuffed red peppers with corn, black, beans and lean beef

Recipe Ingredients for Stuffed Peppers with corn, black beans, and lean beef

1 lb lean ground beef
1 cup corn
1 cup rotel tomatoes
2 cup black beans
1 onion
2 tbspn olive oil
1 c reduced fat cheddar cheese

Recipe Directions for Stuffed Peppers with corn, black beans, and lean beef

  1. Cook chopped onion in olive oil.

  2. Add beef and brown.

  3. Add corn.

  4. Add Old El Paso Taco Seasoning and Water.

  5. Add Rotel Tomatoes.

  6. Add Black Beans.

  7. Simmer

  8. Separately, boil peppers for 3 minutes.

  9. Fill peppers with stuffing and bake in oven at 350 for 15 minutes or until heated through.

  10. Add cheese.

  11. Serve
