Recipe Ingredients for Stuffed peppers with Cheese

6 poblano peppers, roasted and cleaned peel
1/2 lb monterey jack cheese, shredded
2 eggs, mixed
1/4 cup olive oil, fried peppers
4 tomatoes, boiled
2 jalapeno peppers, boiled
1 clove garlic
1/4 cup flour
1/4 cup onion, diced
1 tbsp chicken boullion cube

Recipe Directions for Stuffed peppers with Cheese

  1. roast the peppers, then place in plastic bag for 10 minutes and then remove skin, make a lit on the side remove the inner seeds and keep the pepper stem.

  2. fill peppers with cheese use a toothpick to keep cheese from coming out

  3. cover peppers with a thin layer of flour evenly

  4. separate egg whites from yolk. whisk egg whites for 3 minutes and then add yolks

  5. put oil in pan, cover peppers in egg batter and fry evenly for 2-3 minutes. place on paper towels to remove excess oil. let peppers cool down and then remove toothpicks from pepper.

  6. make sauce by blending tomatoes, jalapenos and garlic. Sauted onions in 1 tbsp of oil and then add sauce. let it simmer for 10 minutes and add chicken boullion.

  7. add peppers to sauce
