A healthier version of the traditional stuffed pepper soup

Recipe Ingredients for Stuffed Pepper Soup

1 pound ground chicken breast
2 quarts hot water
28 oz tomato, pureed
28 ounce tomato, diced and undrained
2 cups cooked long grain rice
2 cups chopped green peppers
2 teaspoons salt
2 teaspoons beef bouillon granules
1 teaspoon pepper

Recipe Directions for Stuffed Pepper Soup

In a Dutch oven, cook meat over medium heat; drain if necessary. Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until peppers are tender. Yield: 12 servings.
