Stuffed Pepper Recipe

Makes 6 servings



1 pepper per serving. Adding celery optional Also can use Brown Rice instead of Quinoa

Recipe Ingredients for Stuffed Pepper

6 bell peppers, tops & seeds removed
1 tbsp olive oil
1 yellow onion, diced
1 large carrot, peeled & diced
2 cloves garlic, minced
8 ounces lean ground beef
1 tsp pepper
14 1/2 oz diced tomatoes
1 cup quinoa, cooked
1 cup cheddar cheese, grated

Recipe Directions for Stuffed Pepper

  1. Preheat Oven to 375F

  2. Bring large pot of water to boil

  3. Add peppers to pot and cook until tender

  4. Remove from water and invert to drain fully

  5. Warm Olive Oil in med-high heat in fry pan

  6. Add onion cook until tender

  7. Add carrot (Celery optional) & garlic cook until soft

  8. Add beef & pepper & cook until no longer pink

  9. Add tomatoes & cooked quinoa

  10. Stir in 3/4 cup cheese

  11. Fill peppers with mixture

  12. Sprinkle remaining with cheese

  13. Bake until cheese is melted and pepper is heated through (5 min)

  14. Serve Hot
