Recipe Ingredients for Stuffed Pepper

1 bell pepper
5 button mushrooms
5 cherry tomatoes
2 tbl cooked brown rice

Recipe Directions for Stuffed Pepper

  1. Chop and place all veggies inside two halves of the bell pepper

  2. top each half with a slice of cheese, I use muenster or mozzarella

  3. bake for about 30 min in 350 degrees

  4. you can drizzle with olive oil, but I generally dont due to calories :)

  5. also adding some garlic makes it tasty
