Quinoa and veggie stuffed eggplant and pepper

Recipe Ingredients for Stuffed pepper and eggplant

0.5 medium raw Bell Pepper Red
0.5 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1/4 cup (dry) (uncooked) Quinoa Organic Grain
0.25 cup Corn, Sweet, Yellow
0.25 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
10 rings Onions
0.25 cup Black Beans Drained and Rinsed
0.25 cup Spinach
1 clove Garlic
1 serving ITALIAN PARMESAN CHEESE
1/4 cup Organic Crushed Tomatoes
1 burger Meatless Burgers

Recipe Directions for Stuffed pepper and eggplant

  1. Split red pepper and remove seeds and ribs {be careful not to destroy the integrity of the shape}. Hollow out the split eggplant and dice the flesh you removed.

  2. Precook the quinoa according to box directions.

  3. Roast the eggplant and peppers upside down on a non stick sheet pan in 400 degree oven until slightly soft.

  4. Saute diced eggplant flesh with the Boca burger that has been diced. Add garlic{minced} and spinach{chopped}.

  5. Add diced tomatoes, onion, corn and black beans and quinoa.

  6. Mix in the crushed tomatoes and season to taste.

  7. Divide the mix into 2 equal parts and stuff half into the pepper and half into the eggplant, top with half the Parmesan cheese and heat through in 400 degree oven until cheese is lightly browned.'

  8. Save other halves of the pepper and eggplant for another meal or double the batch and it is enough for 2.

  9. I eat one pepper and one eggplant.
