Recipe Ingredients for Stuffed Pepper Cups

4 small Peppers, Sweet, Green
10.66 oz Beef, Ground, 85% Lean Meat / 15% Fat, Crumbles
5.33 tbsp chopped Onions
0.5 tsp Sea Salt
0.66 cup Rice, Brown, Long-grain, Cooked
9 oz Tomatoes Diced
0.5 cup Cheddar Shredded Cheese
1 serving Worcestershire Sauce
0.25 tsp Garlic Powder

Recipe Directions for Stuffed Pepper Cups

  1. Cut off pepper tops, seed peppers, and cook over boiling water for 3 to five minutes. Sprinkle insides generously with salt.

  2. Cook the ground beef with onions and salt until browned.

  3. Add canned tomatoes, cooked rice, garlic, and Worcestershire sauce. Simmer for about ten minutes. Add cheddar cheese and heat until it melts.

  4. Place pepper cups in baking dish and stuff with filling. Pour tomato sauce over the top and sprinkle mozzarella cheese on top. Bake in a 350 degree oven for about a half hour.
