Takes all the work out of stuffed peppers. A favorite with everyone who likes the filling but not so much the pepper. Serving size is about 1/2 of a cup.

Recipe Ingredients for Stuffed Pepper Casserole

3 cups green pepper, thinly sliced and blanched
3 lbs hamburger, browned and drained
56 ounces tomato sauce (2 cans)
3 cups cooked rice
1 1/2 cups chopped onion
2 tsps garlic, crushed

Recipe Directions for Stuffed Pepper Casserole

  1. Preheat the oven to 350 degrees F.

  2. Place the blanched green pepper in the bottom of a 9 x 13 casserole dish. Combine all remaining ingredients except the mozarella cheese, reserving about 1 1/2 cups tomato sauce.

  3. Pour the hamburger mixture over the green peppers in the casserole dish. Spread reserved sauce on the top.

  4. Bake, uncovered, for about 30 minutes, or until heated through. Optional: Sprinkle with 6 ounces mozarella cheese and bake another 10 minutes or until cheese is browned and bubbly.

  6. This dish depends completely on the quality of the tomato sauce: I prefer the Dei Fratelli brand, since most others tend to make a very bland or very salty casserole.
