1 lb. lean ground beef
1 1/4 cups rice
12 ounce V-8 juice
20 ounce crushed tomatoes
1 large onion, chopped
1 clove garlic, chopped
4 cups red peppers, chopped
4 cups cabbage, chopped

Recipe Directions for Stuffed Pepper Casserole

Brown beef with onions, garlic and seasonings to taste. Add remaining ingredients plus 2 Cups water and bake at 350 for 30 - 45 min.
