Recipe Ingredients for Stuffed Pepper Casserole

12 oz Organic Low Sodium Chicken Broth
10 oz Chili Beans
1 cup, sliced Onions
1 medium raw Bell Pepper Red
4 oz Neufchatel Cheese
1 cup (dry) (uncooked) Quinoa Organic Grain

Recipe Directions for Stuffed Pepper Casserole

  1. Cook Quinoa in Broth.

  2. Dice Peppers and onions, cook. Warm beans with Peppers and Onions.

  3. Mix everything together and top with cream cheese and cheddar cheese (also lightly warmed and mixed together). This should make a thin layer.

  4. Broil for 4 minutes or until cheese is melted.
