Recipe Ingredients for Stuffed Pepper Casserole With Chicken

2 cups brown rice, cooked
8 ounce mozzarella cheese
1 onion, diced
1 green pepper, diced
1 tomato, diced
15 ounce tomato sauce
1 chicken breast, cooked and chopped

Recipe Directions for Stuffed Pepper Casserole With Chicken

  1. Grill or bake 1 chicken breast until cooked thoroughly. Chop to bite size pieces.

  2. Cook 2 cups brown rice until tender.

  3. Grate 8 ounce mozzarella cheese.

  4. Saute pepper, onion, and tomato until tender.

  5. Mix rice and tomato sauce in saute pan until all ingredients are mixed thoroughly and hot. Add pepper,onion,tomato,and chicken and mix again thoroughly.

  6. Transfer to baking dish and top with cheese. Bake on 350 until cheese is bubbly and golden brown.
