Recipe Ingredients for Stuffed Pablano Peppers

4 Peppers, Sweet, Green
8 oz. ground beef
1 zuccini
1 onion
2 c. enchilada sauce
2 oz. cheddar cheese

Recipe Directions for Stuffed Pablano Peppers

Cook up and set aside 8 oz. of ground beef with taco seasonings. Roast pablano peppers; peel charred skin and remove stem/seeds. Saute diced zuccini and onion; season with salt, pepper, and ground cumin. Mix meat and vegetable mixture. Prepare casserole pan by pouring enough enchilada sauce in bottom to cover. Stuff each pepper with 1/4 meat/vegetable mixture. Place in casserole. Pour remaining enchilada sauce over the stuffed peppers. Sprinkle with grated cheddar cheese. Bake @ 350 degrees until hot and bubbley.
