Stuffed Mushrooms Recipe

Flavorful and mostly healthy stuffed mushroom recipe. Goes great with a nice red wine - Shiraz or Red Zinfadel.

Recipe Ingredients for stuffed mushrooms

1 cup, chopped Onions
12 small Mushrooms
6 grams Garlic
5 oz Goat, Soft Type Cheese
1 1/2 cup Spinach
1/2 cup Panko

Recipe Directions for stuffed mushrooms

  1. Set out goat cheese 30 minutes to warm up. Preheat oven 400 F. Clean and chop raw spinach, set aside. Cut off mushroom stems and put in food chopper. Roughly chop onion and garlic, add to food chopper. Pulse until all pieces are very small. Transfer to hot 10" saute pan. Saute for 2-3 minutes. Add spinach to saute pan. Saute until wilted. Add goat cheese to mixing bowl. Add sauteed mixture to mixing bowl. Stir to incorporate well. In another small bowl add 1 cup panko and 1-2 TBSP olive oil until it starts to slightly stick together. Line baking pan with parchment paper. Scoop out middle/left over stem parts from mushroom caps. Spoon in goat cheese mixture. Bake 400 for 25-30 minutes.

  2. *You could also substitute half goat cheese with cream cheese for milder flavor or try an herb goat cheese.
