Easy stuffed portabello mushrooms

Recipe Ingredients for Stuffed Mushrooms

0.5 cup Bread Crumbs, Dry, Grated, Plain
3 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
8 ounce Mushrooms, Portabella
3 tbsp Butter
4 tbsp chopped Onions
0.38 cup leaves, whole Basil, Fresh
1 tbsp Extra Virgin Olive Oil

Recipe Directions for Stuffed Mushrooms

  1. Preheat oven to 350'F.

  2. Remove and set aside stems from a dozen mid sized portabello mushrooms. Place cap side down in a large baking dish and drizzle tops with the olive oil. Bake 15 minutes. Remove from oven and turn caps open side up.

  3. While the mushrooms are baking, dice bacon and add to a pan on medium heat. After bacon begins to stiffen (but before it browns), add diced onion. Dice mushroom stems and add along with 1 T of butter to the pan after the bacon is browned and the onions have softened. Stir until cooked and remove from heat.

  4. Combine the remaining 2 T of (cold) butter with the finely diced basil. Divide evenly among the mushrooms, spreading inside the caps

  5. Add the bread crumbs to the mushroom stem mixture and stir well to combine. Divide it among the mushrooms, packing it down into the caps.

  6. Return to oven and bake another 15-20 minutes, reducing heat to 325'F and being careful not to let the edges burn!
