Mushrooms stuffed with a creamy filling topped with tomato sauce

Recipe Ingredients for Stuffed Mushrooms

30 mushrooms
1/2 cup tomato sauce
3 artichoke hearts
1 cup chopped spinach
1 cup light cottage cheese
3 tablespoons of parmesan cheese
1/4 cup diced olives
2 tablespoons olive oil

Recipe Directions for Stuffed Mushrooms

  1. Preheat oven to 350 degrees. Arrange stemless mushrooms in a a shallow baking dish. (save stems) Brush on olive oil. Bake for 8-10 minutes or until mushrooms are soft.

  2. In a bowl put diced up mushroom stems, spinach leaves, olives, artichoke hearts, and cottage cheese. Mix together. Sautee ingredients for 3 minutes with some olive oil. When mushrooms come out of oven, drizzle some tomato sauce in mushroom caps. Stuff the mushrooms with the ingredients you have sauteed and mixed together, Over flowing the stuffing is good. Drizzle the rest of the tomato sauce over the stuffed mushrooms. Sprinkle parmesan cheese over the top. Bake for an additional 8-10 minutes or until hot. Viola!
