From Eating Well March/April 2009 (with added italian sausage)

Recipe Ingredients for Stuffed Mushrooms

10 oz portabella mushrooms
10 oz ricotta
8 oz shredded parmesan
8 oz spinach, finely chopped
1/3 lb italian sausage
1/2 cup marinara sauce

Recipe Directions for Stuffed Mushrooms

  1. Roast cleaned & degilled mushrooms 20 minutes at 450.

  2. Brown sausage; mix together cheeses, spinach, sausage & italian seasoning.

  3. Place heaping tablespoon of marinara in each cap; top with cheese mixture. Bake for additional 5-10 minutes until browned & gooey.
