Name says it. not for the lactose intolerant. IMPORTANT, MUSHROOM ONLY HAS STEM REMOVED AND EGGPLANT IS SLICED. NOT CUBED. Also, just about a tablespoon each of the cheeses will do and I left out the egg in the ingredients list because you'll want to make at least two servings for the egg to cheese ratio. Saute's onions are a nice addition but bad for fats.

Recipe Ingredients for Stuffed Mushrooms and fried eggplant

1 cup (1" cubes) Eggplant
1/2 cup, diced Mushrooms, Portabella
1 serving Sauteed Onion and Garlic Robusto
0.13 cup Ricotta, Whole Milk Cheese
0.13 cup (not packed) Cottage Cheese, Lowfat, 1% Milkfat
0.13 cup, crumbled Feta Cheese
1 oz Mozzarella, Part Skim Milk Cheese
1 tbsp Butter

Recipe Directions for Stuffed Mushrooms and fried eggplant

  1. Mix ricotta, feta, and cottage cheeses. Add egg. Season to taste. cover whole mushroom. Bake at 350 while preparing eggplant.

  2. slice eggplant and fry very briefly in butter. spread on cookie sheet. add dollop of tomato sauce and a little cheese. bake below mushrooms.

  3. set timer for aprox twenty minutes or until cheese is cooked thoroughly (ricotta mix will be fluffy if disturbed with fork.) put dollop of sauce on mushroom. bake for five more minutes.
