Recipe Ingredients for Stuffed Mushroms

2 stalks celery
2 medium onions
1 medium green pepper
1 lb button mushrooms
1/2 pound pork sausage
1/2 pound ground beef
12 tbsp garlic
1/4 cup fresh parsley
2 tbsp fresh thyme
2 tbsp fresh rosemary
8 slices white bread
1/3 cup whole milk
1 tsp kosher salt
1 tsp ground pepper
2 tbsp extra virgin olive oil
2 tbsp unsalted butter

Recipe Directions for Stuffed Mushroms

Clean mushroom with a damp papertowl and remove stems. Chop stems. Chop celery, onion, and green pepper into bite small pieces. Finely mince or grate 5 cloves of garlic. Finely chop parsley, thyme, and rosemary. In a large skillet add olive oil and heat over medium heat. Add celery, chopped mushroom stems, onion, green pepper and garlic. Add salt and pepper. Cook until onions are translucent (about 7-8 minutes). Add ground sausage and ground beef and. Using a spatula or wooden spoon break the meat into very small bits and cook until cooked all the way through and no pink is left. Drain fat and liquids from the mixture. Stir in parsley, thyme, and rosemary. Remove from heat and allow to cool slightly. In a small bowl break the bread into small bits with your fingers and add milk. Mix well and let sit for 5 minutes. Mixture will be a bit soupy. If too soupy add a piece or two of bread. In a large bowl put the bread mixture. Add the meat mixture and mix very well. Fill the center of the mushroom caps with mixture. Take 1 tsp pats of butter and cut into 4 pieces. Put one piece on top of each mushroom. Bake at 350 for 30 minutes. Serve.
