Recipe Ingredients for Stuffed Mixed Peppers

11 1/5 oz ground beef, 80%
1 cup baby bella mushrooms
1/2 tsp garlic powder
1/2 tsp mustard, dry
1 dash cinnamon, ground
1 dash nutmeg
4 dash salt
4 dash pepper, black
1 scallion
3 dash red hot pepper sauce
16 oz red pepper
1 1/2 cup chicken broth

Recipe Directions for Stuffed Mixed Peppers

  1. saute mushrooms in melted vegetable spread or grape seed oil.

  2. chop cooked mushrooms

  3. add scallions, cinnamon, nutmeg, dry mustard, salt, pepper and pepper sauce to mushrooms. Stir.

  4. Add ground beef stir and combine as it cooks.

  5. cut tops from peppers

  6. remove seeds and discard. save tops.

  7. fill each pepper with cooked, cooled ground beef mixture. replace tops.

  8. put in cast iron or oven proof dish

  9. add chicken broth to dish

  10. bake at 350 degrees for 45 minutes or until desired degree of tenderness.
