Recipe Ingredients for Stuffed Mini Peppers

15 ounces mini sweet peppers
1/2 cup chopped onion
1/2 cup chopped celery
1 cup fresh tomatoes, chopped
15 3/4 ounces can tomato sauce
1 clove garlic, crushed
1 teaspoon oregano
1/2 teaspoon basil
1 teaspoon salt, divided
1/4 teaspoon ground black pepper, divided
1 egg, lightly beaten
1 teaspoons Worcestershire sauce
1 pound lean ground beef or chuck
1 cup jasmine rice, cooked
2 4/5 ounces Mozzarella cheese, shredded, optional

Recipe Directions for Stuffed Mini Peppers

  1. Cut peppers in half. Remove membranes and seeds. Wash and drain well. Saute chopped onions and celery and tops of peppers or steam in microwave. Combine tomatoes, tomato sauce,garlic, oregano, basil, 1/2 tsp salt and 1/8 tsp pepper. Simmer for about 10 minutes.

  2. In a large mixing bowl, combine egg with remaining 1/2 tsp salt and 1/8 tsp pepper and Worcestershire sauce. Stir to blend. Add Ground beefm, cooked rice, and 1 cup of the tomato mixture. Mix well. layer mini pepper halves in casserole dish. Top with the ground beef mixture. Pour a little remaining tomato sauce mixture over the peppers. Make two layers. Bake at 350 for about 40 - 60 minutes or until done. Top with a little shredded cheese just before peppers are done. Cook just until melted.
