Recipe Ingredients for Stuffed jalepeno with garlic and sweet onion

2 jalepeno peppers
1 bartlett pears
1/2 cup red cabbage
1/2 cup red onion
3 cloves garlic
1/8 cup olive oil

Recipe Directions for Stuffed jalepeno with garlic and sweet onion

  1. Roast peppers whole over open flame until completely blackened, cool remove skin and cut a slit only large enough to remove seeds and vein.

  2. Peel, core, and julienne pears.

  3. Chiffonade red cabbage.

  4. Slice red onion.

  5. Stuff jalepeno with julienne pear, cover with red onion and minced garlic, drizzle with olive oil and roast until color developes.

  6. Serve on bed of red cabbage
