Tasty side dish, or appetizer. Can be VERY spicey though.

Recipe Ingredients for Stuffed Jalapeno Peppers

12 Jalapeno peppers
8 oz Neufchatel cheese
1/2 cup cheddar cheese (shredded)
1/4 cup onion (minced)
1/4 tsp salt
1/2 cup bread crumbs

Recipe Directions for Stuffed Jalapeno Peppers

  1. Cut peppers in half. Remove seeds/ribs(might want to wear gloves). Put on a microwave safe plate and microwave for 10min.

  2. In a bowl combine cheese,onion,and salt. Stuff mixture inside pepper halves. Spinkle bread crumbs on top.

  3. Place peppers on beaking sheet. Bake in a 425 degree oven for 20min or until bread crubs a golden brown. Cool.
