Recipe Ingredients for Stuffed Green Peppers

8 oz Beef, Ground, 90% Lean Meat / 10% Fat, Patty
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
0.33 cup, chopped Onions
2 ea Tomato Raw Medium
0.5 cup Long Grain White Rice
1 cup, diced Low Fat, Cheddar Or Colby Cheese

Recipe Directions for Stuffed Green Peppers

  1. Halve peppers and remove stems and seeds. Immerse into boiling water for 3 min and then drain over paper towels.

  2. In lg skillet, cook meat and onion till meat is brown. Drain off fat. Stir in chopped tomatoes, uncooked rice, water, 2 tsp Worcestershire sauce, 1/2 tsp dried basil and 1/4 tsp pepper. Bring to boiling, reduce heat. Cover and simmer 15 to 18 min til rice is tender. Stir in 2/3 of the cheese. Spoon meat mixture into peppers. Place peppers in an 8x8x2" baking dish. Spoon any remaining meat mixture into baking dish.

  3. Bake, uncovered, in a 375 degree oven about 15 min til heated through. Sprinkle with remaining cheese. Let stand for 1 to 2 min til cheese melts.
