Stuffed Green Peppers Recipe

Stuffed peppers. If you use Uncle Ben's boil in a bag rice, 1 bag is exactly what you need.

Recipe Ingredients for Stuffed Green Peppers

4 large green peppers
2 cups cooked Long Grain Brown Rice
16 oz Ground Turkey
1 cup frozen corn
1 1/2 cups diced tomatoes
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Italian Seasoning
84 g or 4 slices Kraft Fat Free Swiss Cheese

Recipe Directions for Stuffed Green Peppers

  1. Cut peppers in half long ways, deseed and destem.

  2. Boil peppers in pot of water until they are almost soft but still a little firm.

  3. Cook rice according to package directions.

  4. Brown turkey and drain.

  5. In a large bowl mix together turkey, rice, corn, diced tomato and seasonings.

  6. Fill peppers with stuffing.

  7. Place 1/2 slice of cheese on each pepper.

  8. You will likely have left over stuffing, which probably makes these a little less in calories than analyzed.

  9. I like to use the leftover stuffing as a pita sandwich!
