Green Peppers stuffed with meat and rice mixture.

Recipe Ingredients for Stuffed Green Peppers

1 lb ground beef
2 cloves garlic, minced
1 tsp chili powder
3 tsp salt
2 tsp sugar
1 jalapeno pepper, chopped with seeds
6 bell peppers
4 Roma tomatoes
1 large red onion
15 oz tomato, pepper, onion mix
3 cups dry brown rice, minute rice

Recipe Directions for Stuffed Green Peppers

  1. Cut off tops of peppers. Place peppers in pot of boiling water with salt. Cover. Boil 5 minutes. Drain. In pot, cook minute rice for 6 servings. In skillet, saute beef, garlic, chili power, sugar, jalapenos and onions. Drain off grease. Add chopped tomatoes and canned tomatoes. Mix rice with meat. Stuff peppers. Cover and bake at 350 degrees for 20-40 minutes (depends on how soft you like your peppers).

  2. You can also add corn and tomato paste.
