Stuffed Green sweet peppers that are a little healthier than usual.

Recipe Ingredients for Stuffed Green Peppers

4 small green sweet peppers
1 salt (optional)
12 ounces extra lean ground beef
1/3 cup chopped onion
1 cup water
1/3 cup long grain rice
1 tablespoon Worchestershire sauce
1 tablespoon basil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 medium tomatoes, peeled and chopped
1/4 cup shredded monterey jack cheese

Recipe Directions for Stuffed Green Peppers

  1. Cut tops off sweet peppers; remove seeds and membranes. Immerse sweet peppers in poiling water for 3 minutes. If desired, sprinkle insides with salt. Inver on paper towel to drain

  2. In a large skillet cook meat and onion until meat i s brown and onion is tender. Drain off fat. Stir in the water, uncooked rice, Worcestershire, basil, the 1/4 teaspoon salt, and black pepper. Bring to boiling, reduce heat. Simmer, covered for 15-18 minutes or until rice is tender. Stir in tomatoes and any fresh herb

  3. Spoon meat mixture into sweet peppers. Place in a square baking dish, with any remaining meat mixture. Bake, uncovered, 375 oven for 15-20 minutes or until heated through. Sprinkle with chhese.
