Recipe Ingredients for Stuffed Green Peppers

1/2 lb ground turkey
1/2 cup carrots, shredded
2/3 cup spinach, chopped
1 egg
1 tsp fennel
1 oregano, pepper, cayenne pepper to taste
2 green peppers
14 oz tomatoes, diced
2 tbsp shredded cheddar cheese

Recipe Directions for Stuffed Green Peppers

  1. preheat oven to 350 degrees.

  2. mix together the turkey, carrots, spinach, and egg.

  3. add spices, adjusting them to taste.

  4. cut off the stem ends of the two peppers and remove the seeds.

  5. divide the turkey mixture and stuff in the two peppers.

  6. pour 1/2 the tomatoes in the bottom of a 9 x 9 baking dish.

  7. put the stuffed peppers into the baking dish, resting on the tomatoes.

  8. spoon the remaining tomatoes over the top of the peppers.

  9. put 1 tbsp of shredded cheese on each the peppers.

  10. cover with aluminum foil and bake for about 45 minutes.

  11. remove the foil and bake an additional 15-20 minutes, or until the cheese is nicely melted.

  12. enjoy!
