Nice, hearty soup! Use: 1 (14 oz.) can low sodium beef broth, 1 (14.5 oz.) can diced tomatoes, not drained & 1 (10 3/4 oz. can tomato soup, undiluted.

Recipe Ingredients for Stuffed Green Pepper Soup

16 oz sirloin, ground
2 cups chopped green bell pepper
1 cup chopped onion
1/4 tsp. black pepper
14 oz. low sodium beef broth
14 1/2 oz. diced tomatoes
10 3/4 oz. tomato soup
1 1/2 cups cooked brown rice

Recipe Directions for Stuffed Green Pepper Soup

  1. Heat a dutch oven to med-hi heat.

  2. Add beef, cook until browned.

  3. Add green pepper and onion.

  4. Cook 8 minutes, or until tender.

  5. Stir in black pepper, broth, tomatoes, and soup. Bring to a boil.

  6. Reduce heat and simmer 45 minutes.

  7. Spoon 1/4 cup hot cooked rice into six bowls.

  8. Top with 1 cup of soup.

  9. Enjoy.
