Recipe Ingredients for Stuffed Green Pepper Caveman-friendly

6 oz green pepper, top removed
4 oz 95% lean ground beef
1 oz cheddar, shredded
1 1/3 oz mushroom, chopped
1 3/4 oz carrot, shredded
1 1/2 oz onion, chopped
1 clove garlic, chopped
2 1/2 tbsp tomato paste
3/8 tbsp butter
1/2 tbsp salt
1/2 tbsp pepper

Recipe Directions for Stuffed Green Pepper Caveman-friendly

  1. De-top and clean peppers.

  2. Blanch peppers in boiling water for 5 minutes.

  3. Sautee onion and garlic until golden.

  4. Combine mushroom, carrot and tomato paste (with any desired spices) in food processor to make coarse paste.

  5. Fold together beef, veggie paste, onions, and cheese by hand in large bowl.

  6. Salt inside of peppers, then stuff with beef mix.

  7. Bake 350 degrees for 25 minutes.

  8. Quantities are for single pepper. Multiply by four to use 1 pound beef.
