Green bell peppers stuffed with rice, meat, and lots of veggies.

Recipe Ingredients for Stuffed Green Bell Peppers

6 green bell peppers
1 1/4 lb lean ground turkey
1 cup instant brown rice
1 cup chopped carrots
1 cup chopped celery
1 cup chopped red onion
1 cup chopped tomato
1 tsp minced garlic
1 tsp salt
1/4 tsp black pepper
1 can condensed tomato soup
1/8 tsp cumin
1/8 tsp chili powder
1 tbsp fresh basil
1/2 cup sharp cheddar cheese

Recipe Directions for Stuffed Green Bell Peppers

  1. Remove tops and seeds from bell peppers. Reserved tops. Boil for 3 minutes. Drain and immediately place into ice water; invert on paper towel.

  2. Cook rice according to package instructions. Chop remainder of tops of green peppers, carrots, celery, onions, and tomato. Combine cooked rice, raw meat, chopped vegetables, garlic, salt, and black pepper.

  3. Place green peppers in greased 9x13 baking pan. Spoon rice, meat, and veggie mixture into bell peppers. Combine tomato soup, undiluted, with basil, cumin, and chili powder. Spoon over stuffed bell peppers.

  4. Bake, covered, at 350 for 55-60 min or until meat is browned. Remove, sprinkle with cheese, and bake for 5 min or until cheese is melted.
