Stuffed Green bell peppers mexican style

Recipe Ingredients for Stuffed Green Bell Pepers - Mexican

4 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
8 oz Ground Turkey, 93% Lean
2 1/2 oz Spanish Rice Pilaf Mix
1/2 cup Organic Diced Tomatoes
1 pepper Peppers, Jalapeno
3/4 medium White Onion
3 oz Colby and Monterey Jack Cheese

Recipe Directions for Stuffed Green Bell Pepers - Mexican

  1. Cook Near East Spanish rice - approx. 25 min.

  2. Cut tops off of Green peppers.

  3. Brown turkey, onion, jalapeno, and diced up leftover tops of green peppers.

  4. Once browned add taco seasoning and water (matching the directions for taco meat on the taco seasoning package.)

  5. Add tomatoes

  6. While that is cooking, put the peppers in a dish, and microwave for 8 minutes.

  7. Finish rice, and then add rice to the meat/tomato mixture.

  8. Spoon into peppers. sprinkle cheese on the tops.

  9. Cook at 350 degrees for 30 min. Add fat free sour cream to serve if you want.
