Recipe Ingredients for stuffed grape leaves with lamb shanks

1/2 lb hamburger
1 1/2 cup jasmine rice
1/2 cup parsley, minced
1 tbs mint, minced
2 tsp cinnamon
1 tsp cumin
1 dash salt
1 dash pepper
1 cup water
16 oz. grape leaves
20 oz. diced tomatoes
4 tsp olive oil
1/2 cup lemon juice
1 cup plain yogurt
12 cloves garlic, minced, divided
1 cup cucumber, minced
2 lb. lamb shanks

Recipe Directions for stuffed grape leaves with lamb shanks

  1. First: Stir shopped cucumber and 3 garlic clovesinto the yogurt. Place In frig to ?marry? flavors.

  2. In a small bowl mix by hand the rice, hamburger, parsley, mint, cinnamon, cumin, s & p, and 1 cup of water. Mix thoroughly. It will be soupy, and thick.

  3. To stuff grape leaves, rinse leaves carefully then spread a leaf flat on a work surface. (Her father says to use tsp filling if leaf is small, or 1 Tbs. if it is the size of a woman?s hand. Adjust accordingly!) Place the stuffing at the base of the leaf, roll once to cover, fold in the sides and finish rolling.

  4. Place the lamb shanks in the bottom of a large Dutch oven and sprinkle with half the remaining garlic clove halves. Place half the stuffed grape leaves on top of the shanks, lining them in rows, folded seam down. Sprinkle with the rest of the garlic. Top with remaining grape leaves. Top with tomato, 4 tsp olive oil, remaining cup water and juice of 2 lemons.

  5. Bring pot to a boil, then lower to simmer (check juice after one hour, if dry add water)

  6. Simmer for a total of three hours.

  7. Eat with flavored yogurt.
