Recipe from Cook Yourself Thin! So Good. I added lemon zest and a little bit of fresh lemon juice to the ricotta mix.

Recipe Ingredients for Stuffed French Toast Sundaes

1 whole egg
1 egg white
2 tbsp skim milk
1/2 tsp ground cinnamon
1 tsp honey
4 slices whole wheat bread
1/2 c part-skim ricotta cheese
1/2 c raspberries
1/2 c blackberries
2 tbsp pure maple syrup

Recipe Directions for Stuffed French Toast Sundaes

  1. Preheat oven to 375

  2. In a bowl, combine egg, egg white, cinnamon, honey and milk together and whisk. Remove crusts from bread and dip into egg mixture. Spray muffin tin and line muffin cups with bread- bake for 12 minutes.

  3. Meanwhile, in a small bowl- stir the ricotta cheese until smooth. Add lemon zest and a few drops of fresh lemon juice.

  4. Once the bread is done, line the cups with the cheese mixture, top with berries and drizzle with syrup.
