2 eggplants, 1 lb ground lamb, 1 medium onion, 1 red bell pepper 3garlic cloves, salt,1/4 cup feta cheese, 1/4 cup parmesan cheese,2 tomatoes, ground pepper, 1.5 t oregano

Recipe Ingredients for stuffed eggplants with Lamb

16 oz Lamb, Ground
32 oz Eggplant
3 serving Garlic Cloves
1 medium raw Bell Pepper Red
1 medium Onions
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 tbsp Oil Olive Extra Virgin
1.5 tsp Oregano, Ground
1/4 cup Reduced Fat Feta Traditional Crumbled
1-.25 cup Parmesan, Grated Cheese

Recipe Directions for stuffed eggplants with Lamb

pierce eggplant in 2 to 3 places. roast at 400F for 20 min. half lengthwiseand scoop out pulp when cool enough to handle. Drain chopped pulp in colander. Sautee chop onion and pepper in 1 T olive o oil for 8 min, add lamb and cook until no longer pink. add egg plant pulp, oregano, tomato sauce made from (2 tomatoes) . Reduce heat to low stir occasionally for 15 min or until thick. Stir in 1/4 cup crumbled light feta cheese. Place eggplant shells in baking pan and add stuffing. sprinkle withParmesan cheese and remaining T of olive oil
