Stuffed eggplant with sausage and veggies.

Recipe Ingredients for Stuffed Eggplant

2 medium (2-1/2" dia) Onions
4 clove Garlic
2 tbsp chopped Shallots
3 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
0.75 cup, chopped Peppers, Sweet, Red
0.75 cup, chopped Peppers, Sweet, Green
0.75 cup, diced Mushrooms, Portabella
24 oz Sausage, Italian, Sweet, Links
1.5 cup Bread Crumbs, Dry, Grated, Plain
1.5 cup Spinach
1 glass (3.5 fl oz) Wine, Table, White

Recipe Directions for Stuffed Eggplant

  1. Slice eggplant lengthwise and hollow out eggplant so there is about 1/4 in meat around edge and finely dice the insides.

  2. Finely chop all other veggies.

  3. Put 2 tbsp oil in pan and cook onions, garlic, peppers, and mushrooms until soft and translucent.

  4. Add sausage and cook until brown.

  5. Add eggplant and cook until soft.

  6. Deglaze with white wine and cook off alcohol.

  7. Add spinach and desired spices at very end and heat through.

  8. Remove from heat and add bread crumbs and stir.

  9. Fill eggplant shells with mixture.

  10. Place in greased baking pan and cook in oven at 350 deg for 40 min.
