Recipe Ingredients for Stuffed Eggplant

1/4 cup fiber one cereal
1 eggplant
1 cup chopped onion
1/2 cup chopped red pepper
1/2 cup chopped green pepper
1 cup Meal Starters Grillers Recipe Crumbles
1/2 cup diced tomatoes, drained
1/4 cup egg substitute
2 tablespoons tomato paste
2 tablespoons parmesan cheese
2 teaspoons garlic
1/2 teaspoons italian seasoning
1/4 teaspoon salt
1/2 cup crushed tomatoes
1/2 cup part-skim mozzarella cheese

Recipe Directions for Stuffed Eggplant

  1. Preheat oven to 350 degrees.

  2. Grind cereal into crumbs. Set aside.

  3. Cut eggplant in half lengthwise, cut along edge leaving 1/2" shell and scoop out flesh, chop and set aside. Put shells on a baking dish cut side up.

  4. Put eggplant and peppers into saute pan sprayed with cooking spray. Cook for 7-8 minutes. Cool in bowl.

  5. Add cereal crumbs and remaining ingredients EXCEPT crushed tomatoes and mozzarella cheese. Put mixture equally in shells, lightly pack.

  6. Bake 35 minutes. Spoon crushed tomato and sprinkle cheese over the eggplant and cook 10 minutes longer. Chow down.
