Stuffed baked eggplant - low carb

Recipe Ingredients for Stuffed Eggplant

1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
411 grams Tomatoes Diced
80 grams Onions
1 tsp, ground Basil, Dried
1 oz Oregano
1 clove Garlic
1 serving size Light Swiss Original
1 serving size Light Swiss Original
1/2 cup Cottage Cheese Fat Free
0.5 cup Mild Cheddar Shredded
1.7 link Spicy Italian Chicken Sausage
1 tbsp Extra Virgin Olive Oil

Recipe Directions for Stuffed Eggplant

  1. Scoop out guts of eggplant and reserve.

  2. Saute in pan with a little olive oil, onions and meat until cooked/soft.

  3. Add tomatoes, herbs, garlic, cheese and stir until melted.

  4. Scoop back into each half of eggplant.

  5. Bake at 400 degrees for 30 minutes, covered, uncover and bake for 5 more minutes.

  6. Let rest for 10 minutes.
