Stuffed Eggplant Recipe

This is so good. I got this recipe from a five ingredient cookbook.

Recipe Ingredients for Stuffed Eggplant

2 eggplants
2 onions, chopped
4 cloves of garlic, chopped
1 tsp dried thyme
2 cups diced tomatoes
1 tsp olive oil

Recipe Directions for Stuffed Eggplant

  1. Cut each eggplant in half lengthwise; trim off stems.

  2. With spoon, scoop out flesh, leaving 1/2 inch thick shell.

  3. Sprinkle inside with salt; let drain, cut side down, in colander in sink.

  4. Chop flesh.

  5. Add to colander; let stand for 30 mins.

  6. Rinse and press dry in towels.

  7. Meanwhile in a fryingpan heat non-stick cooking spray.

  8. Add in onions and garlic, for about 10min or until very soft.

  9. Add thyme and chopped eggplant; cook for 8-10 min.

  10. Stir in tomatoes; cooking; stirring often for 5 min.

  11. Place eggplant shells in shallow baking dish.

  12. Fill with tomato mixture.

  13. Drizzle with 1 tsp oil.

  14. Cover and bake at 350 for 30min.

  15. Uncover and bake for 10 min longer.
