Stuffed Eggplant Recipe

Eggplant stuffed with turkey and brown rice.

Recipe Ingredients for Stuffed Eggplant

6 oz lean ground turkey
1 small onion chopped
3 cloves garlic
1 small green pepper
2 tbs olive oil
1 large eggplant
1 cup tomato sauce
1 cup cooked brown rice
1 tsp basil
1/2 tsp oregano
1/2 tsp thyme
1 oz grated parmesan cheese

Recipe Directions for Stuffed Eggplant

  1. chop onion, garlic and green pepper

  2. cut eggplant in half and scoop out a deep pocket

  3. chop part of eggplant that was scooped out and mix with other vegetables.

  4. saute vegetables in 2 tsp olive oil

  5. add ground turkey and cook through

  6. add spices and mix thoroughly

  7. place half of mixture in each scooped out eggplant half

  8. spray baking dish with cooking spray

  9. bake eggplant for 1 hour at 400 degrees

  10. sprinkle cheese over top of each eggplant for last 2 mintues
