eggplant stuffed with mushrooms, onions, peppers and cheese.

Recipe Ingredients for stuffed eggplant

1 medium eggplant
1/2 cup chopped onions
3 cloves garlic
1/3 cup chopped mushrooms
2/3 cup chopped peppers
1/2 tsp dried oregano
1/2 tsp dried basil
2 tsp soy sauce
1 tsp rice vinegar
1/2 tsp hot sauce
1 tbsp olive oil
3 tbsp shredded parmesan cheese

Recipe Directions for stuffed eggplant

  1. half and scoop out meat from a medium eggplant. bake in 350 over for 10 minutes.

  2. chop garlic, onion, peppers and mushrooms and sautee in olive oil undtil mixture reduces. add pepper flakes, salt, pepper, soy sauce, vinegar and hot sauce.

  3. remove eggplant from oven - add mixture into each side. cover with parmesan cheese and additional black pepper.

  4. place under broiler to melt cheese.
