Recipe Ingredients for Stuffed eggplant

3 eggplants
3 carrots
250 g ground beef
250 g ground pork
1 onion
4 cloves garlic
1 tbsp olive oil
1 cup tomato sauce
3 tbsp parmesan cheese
2 tbsp parsley
3 tbsp bread crumbs

Recipe Directions for Stuffed eggplant

  1. Roast eggplants until soft and cut in half.

  2. Meanwhile, dice onions, carrots and mince garlic.

  3. Sauté the carrot, onion, 3 cloves of garlic and meat together in the olive oil.

  4. Scoop out the inner eggplant, chop roughly and add to meat mixture.

  5. When meat is just done mix in the tomato sauce and remove from heat.

  6. In food processor, blend parmesan cheese, parsley, bread crumbs and the last clove of garlic.

  7. Fill eggplant skins with meat mixture and top with breadcrumb mixture.

  8. Brown tops in the oven and serve.
