1-2 egg plants(depending on size) makes aprox 8 - 3/4 cup servings

Recipe Ingredients for Stuffed egg plant

5 cups eggplant
1 cup bell pepper
1 cup onion
4 cloves garlic
2 cups fresh basil
1/4 cup grated Parmesan cheese
1/2 cup bread crumbs
1 1/2 cup tomato sauce
1 cup shredded mozzarella cheese

Recipe Directions for Stuffed egg plant

  1. Scoop out flesh from eggplant, Chop eggplant innards with other veggies.

  2. Brown in olive oil (Add only 1 cup basil at very end of browning.)

  3. Place veggies back into eggplant shells. Sprinkle with Parmesan, bread crumb mixture. Pour half of sauce over eggplant. Sprinkle with 1/2 of left over basil. Smother with shredded mozzarella. pore remaining sauce over cheese. Bake at 325 in oven 30+ min When done sprinkle rest of basil over top.
