Recipe Ingredients for Stuffed Dates

30 dates, medjool
3/4 c. part-skim ricotta cheese
30 almonds, lightly toasted
3 tbsp. honey, white
1 tsp. grated ginger

Recipe Directions for Stuffed Dates

  1. Slice the dates in half and discard the pits. Stuff each half with a mixture of cheese, honey, and grated ginger (puree in a food processor for smoothest mix). Ground ginger may also be used- try first 1/4 tsp, then increase it to taste.

  2. Lightly press an almond into the cheese mixture. Serve with a spiced tea for a simple dessert.
