Low fat spin-off of Chicken Cordon Bleu

Recipe Ingredients for Stuffed Chicken

2 lb. chicken breast, boneless & skinless
2 servings ham (12 slices)
4 oz mozzarella cheese (1/2 bag)
1/4 c. grated parmesan cheese
1/2 c. breadcrumbs
1 dash salt
1 dash pepper
1 dash garlic powder
1 tsp parsley
1 tsp oregano

Recipe Directions for Stuffed Chicken

  1. Mix together breadcrumbs and parmesan cheese. Lay out one long sheet of wax paper. (It's easier to do these 2 steps now so you don't have to continuously wash your hands.)

  2. Spray a baking dish w/non stick spray & preheat oven to 350.

  3. Separate chicken into 6 large pieces and thin w/meat mallet.

  4. Lay chicken out on wax paper.

  5. On each piece, place 2 pieces of ham, side by side. Then sprinkle with grated mozzarella cheese.

  6. Roll up the chicken and roll in breadcrumb mixture.

  7. Place in baking dish, and place in the oven. Bake at 350 for 30 minutes.
